Extremely Popular Granola
Upon special request, I recently made this granola for a gathering at my church. It was wildly popular. Wildly. It comes from the February 2013 issue of Bon Appétit.
1 large beaten egg white
3 cups old-fashioned oats
1 1/2 cups chopped nuts (I tend to favor almonds)
1 1/2 cups coconut shavings
1/2 cup agave syrup
1/4 cup olive oil or warmed coconut oil
1/4 cup sesame seeds
2 tablespoons packed light brown sugar
1 1/2 teaspoons salt
1/2 a teaspoon cinnamon
Mix everything together and bake at 300° for 40 minutes, stirring every ten minutes. Let it cool on the baking sheet. It crisps up as it cools. Really, you can add whatever you have on hand–I like to throw in pumpkin seeds and whatever nuts I have on hand. If I don’t have eggs in the fridge, I skip the egg white and and it’s plenty crunchy without it. I toss in craisins post-baking. Dark chocolate would be good too!
Store in an airtight container for up to two weeks. It’s quite the start to one’s day.
