Embracing My Inner Domesticity

Need something delicious to do with an acorn squash?

Acorn Squash Soup:


1 sm onion

1/4c chopped celery

2T butter or margarine

2T all-purpose flour

1tsp chicken bouillon granules

1/2tsp dill weed

dash cayenne pepper

2c chicken broth

1 (12oz) can evaporated milk

3c mashed cooked acorn squash (roast at 350 degrees for 45-60min)

salt and pepper to taste

5 bacon strips, cooked and crumbled


In a large saucepan, saute onion and celery in butter or margarine. Stir in flour, bouillon, dill, curry and cayenne until blended (you’ll probably want to add some broth too to make it blendable!). Gradually add broth and milk. Bring to a boil; stir and cook for two minutes. Add the squash, salt and pepper. Heat through.

In a blender, process the soup in batches until smooth. Pour into bowls and garnish with bacon.

Also, if anyone is wondering, it IS possible to toast squash seeds, just as you would pumpkin seeds. Possibly even tastier!
